Staying at home most of the time pushed me as mom to come up with healthy yet yummy and enjoyable recipes for my family.  My kids love snacks and to be honest, some snack items we buy in the supermarket can be either too sweet or too salty.

So as a mom who puts her kids' wellness as her priority, I make sure I give them healthy snacks.  The best way to be sure is to prepare it myself.  One of their favorites is Potato Wedges.

You read that right!  Potatoes for snacks!  I think potatoes are underrated by some.  We use lots of potatoes for our dishes and snacks because they are really a healthy bunch of produce!

Benefits of potatoes:

  • It's an excellent source of vitamin C
  • It's a good source of potassium (more than a banana!)
  • It's a good source of vitamin B6
  • Fat-free
  • Sodium-free
  • Cholesterol-free
  • Only 110 calories per serving
For me, potatoes are indeed a superfood that's good for the health especially these times!  If it says it's an excellent source of Vitamin C, then I'm ALL IN for potatoes!  We need to boost our immunities especially these days!
